350 g flour
350 g cream
6 eggs
70 sugar
a little salt
50 g orange liqueur
1 glass of orange juice
butter

1. Sift the flour through a sieve, mix with sugar, salt, and eggs.
2. Gradually, without stopping stirring, pour in the cream. When the mixture becomes homogeneous, put it in a cool place.
4. As you take them off, roll them up, transfer them to a dish, pour melted butter and liqueur over them. Serve warmed orange juice separately in a gravy boat.
At the end of the 19th century in Paris, at the famous Comédie Française theater, a comedy was playing in which the popular actress, the public’s favorite, Suzette, played the main role. During the play, the heroine had to eat pancakes with appetite in one of the scenes.
Since the play was performed daily, and poor Suzette had to eat pancakes every evening, she got quite tired of them.
Among the admirers of the actress was the chef of the Marivaux restaurant, located next to the theater building. So, out of love and sympathy for his idol, the chef decided to “invent” special pancakes: small, light and delicious. Since then, Suzette received a plate of fresh, appetizing, melt-in-your-mouth pancakes on stage every day and ate them with great pleasure. The grateful actress, in a sign of her gratitude, allowed the chef to name his signature dish after her.
